Vanilla Pomegranate Margarita

I love margaritas, but they can sometimes feel like warm weather drinks. With this version, I’m highlighting some winter produce and adding a touch of vanilla, so it feels super holiday worthy!


part 1

vanilla simple syrup:

  • (enough for 5-6 margaritas)

  • ½ cup water

  • ½ cup agave

  • 1½ ts vanilla bean paste

  1. Add all ingredients to a small saucepan and whisk to combine.

  2. Heat on medium until steam rises, just under a simmer.

  3. Chill.

part 2

for 1 Margarita

  • 2 oz pomegranate juice

  • ½ oz orange juice

  • ½ oz lime juice 

  • 2 oz Tequila

  • 1 ½ oz vanilla syrup

  1. Add juices, tequila, and syrup to a cocktail shaker.

  2. Fill with ice and shake until the shaker frosts over.

  3. Pour into a serving glass filled with ice cubes with pomegranate arils frozen inside.

*Note: Shaking in the shaker adds some water to the cocktail - and we want that! So, if you plan to multiply this recipe to make a whole batch, be sure to add ice to your punch bowl and allow some time to melt or add some water and taste to make sure the components are balanced.
