Vanilla Pomegranate Margarita

I love margaritas, but they can sometimes feel like warm weather drinks. With this version, I’m highlighting some winter produce and adding a touch of vanilla, so it feels super holiday worthy!
part 1
vanilla simple syrup:
(enough for 5-6 margaritas)
½ cup water
½ cup agave
1½ ts vanilla bean paste
Add all ingredients to a small saucepan and whisk to combine.
Heat on medium until steam rises, just under a simmer.
Chill.
part 2
for 1 Margarita
2 oz pomegranate juice
½ oz orange juice
½ oz lime juice
2 oz Tequila
1 ½ oz vanilla syrup
Add juices, tequila, and syrup to a cocktail shaker.
Fill with ice and shake until the shaker frosts over.
Pour into a serving glass filled with ice cubes with pomegranate arils frozen inside.
*Note: Shaking in the shaker adds some water to the cocktail - and we want that! So, if you plan to multiply this recipe to make a whole batch, be sure to add ice to your punch bowl and allow some time to melt or add some water and taste to make sure the components are balanced.
